  reason: "Spices don't spoil dangerously, but they lose their aroma and potency, and the four things that speed that up are air, heat, light and moisture. Store them in airtight jars or tins so air can't stale them, and keep those somewhere cool and dark — a drawer or a closed cupboard is ideal. The popular spice rack on the wall above the stove is the worst spot, because heat from cooking and daylight both drive off the volatile oils that give spices their flavour; a rack in direct sun is just as bad. Keep them dry, and crucially don't shake a jar directly over a steaming pot, as the rising steam carries moisture into the jar, which clumps the spice and invites mould — spoon it out or shake it into your hand away from the pan. Whole spices (peppercorns, cumin seeds, cinnamon sticks, nutmeg) keep their punch for several years and are best bought whole and ground as needed; pre-ground spices fade within one to two years, and dried herbs even faster. Label each jar with what it is and when you opened it, buy quantities you'll use in a reasonable time, and check by smell — if it barely smells of anything, it's time to replace it."
