  reason: "A baking dish's material decides three things: how fast it browns, whether it survives the microwave and the broiler, and how it looks on the table. Heatproof glass is the most forgiving first buy — oven, microwave, and fridge, and see-through so you catch the bottom browning — but it heats slowly, hates thermal shock (never move it from cold straight into a hot oven), and stops short of the broiler, so drop the oven about 15 °C from a metal recipe. Metal (aluminized or anodized) conducts fast and browns best, which is why roasts, sheet bakes, and bar cookies want it — but it can't go in the microwave, and bare aluminum reacts with tomato and citrus. Ceramic and stoneware heat gently and hold that heat for oven-to-table gratins, at the cost of weight, price, and the same no-broiler, no-thermal-shock rules as glass. Enameled cast iron does the ceramic job with even more heat retention and twice the weight — an upgrade, not a first dish."
